Strawberry transparent cake recipe

Strawberry is one of the best fruits to be used for the preparation of cakes, mousses and creams, thanks to its delicate and fresh flavor. From February to May we advise you to introduce strawberries into your diet, as they are rich in vitamin C, iron and calcium. Preparation time

30 minutes + 3 hours of rest in the refrigerator

  • 250 g strawberries
  • 125 g powdered sugar
  • 25 ml lemon juice
  • 30 g agar
  • 24 g sugar
  • 1l wáter


In a pot, mix sugar, agar and melt over low heat until it boils, adding the water little by little.

At this point, put the the liquid inside the spherical molds and leave it to cool in the refrigerator for 3-4 hours.

For the sauce, take the fresh strawberries, previously washed and cut in small pieces, powdered sugar and lemon juice: beat all the ingredients for few minutes, until you have obtained a thick sauce.

Put the strawberries sauce in the refrigerator for one hour.

Place on a dish a bit of strawberries sauce and put on it the transparent cake, taking care not to break it. Decorate the dessert with a bit of the fresh strawberries sauce
