Recipe: Strawberry Pie

Perfect for any special occasion, this beautiful, fresh homemade strawberry pie is the easiest thing in the world to makeMade with a flaky pastry, cheesecake filling and bursting with fresh strawberries. The bigger the strawberries, the better!

Although Fresón de Palos strawberries will not be available in the market until December, it´s not too early to start experimenting with pies and putting in practice our bakers talent. The good news is that the strawberry pie is a super simple recipe to follow. You´ll just need fresh top quality strawberries, sugar, cornstarch, and lemon juice to bring out all the flavors!

I hope next weekend finds you in the kitchen cooking delicious dessert recipe. The best thing about this recipe is that you need very few ingredients and just 50 minutes of preparation and cooking time.

Ingredients
  • 9 inches unbaked pie crusts
  • 3/4 cups granulated sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 package strawberry gelatin
  • 1 quart fresh strawberries
  • 1 tablespoon lemon juice
  • Fresh mint (optional)
  • 1 Cup heavy whipping cream
  • 1 tablespoons sugar
Instructions
  1. To make the filling, in a small saucepan, combine the sugar, cornstarch, water and lemon juice and whisk until smooth. Before you add the sugar, be sure to taste the strawberries and adjust the sugar accordingly. Bring to a boil; cook and stir for 2 minutes. Remove from the heat and stir in gelatin until dissolved. Refrigerate for 15-20 minutes until cool. Set aside.
  2. Place strawberries straight into the crust (I love homemade pie crust, but to keep things easy you can use refrigerated) and pour glaze over the strawberries. Refrigerate until set. Garnish with mint if desired.
  3. Bake the pie at 450 degrees for 10 minutes. Then reduce heat to 350 degrees for 15 minutes. Rotate the pie and continue baking for 20-30 minutes until the crust is golden brown. Remove from oven and place the strawberry pie on rack to cool completely before serving.
  4. In a small metal bowl beat 1 cup of whipped cream and 1 tablespoon of sugar and refrigerate for 10 minutes before mixing. Serve each piece of strawberry pie decorated with a bit of whipped cream. Enjoy!
